Steve,

Stock control? I count the number of boxes, in stock, on a weekley basis. So I know how much of each product I'm selling and how much to re-order. I don't reconsile money taken/pots sold or give receipts unless asked for. If someone says they've lost a few quid I always pay it without question. Over the five years I've been operating I've never had many problems.
If I had always kept exact records, of course, I could account for every pot sold or £ taken. But the extra work & money saved is just not worth it. I have 00s of machines and have to be in/out very quickly. Ever since I moved into toys, where you open the top & tip em in I only keep records of money taken on each site.
